Ingredients for Pickled Beets Recipe

  • 8 medium-sized fresh beets, unpeeled
  • 1 cup sugar
  • 4 cups white vinegar
  • 2 teaspoons whole cloves
  • 1 teaspoon all spice
  • 1 tablespoon pickling salt
  • 1 teaspoon ground cinnamon


  1. Place beets in a pot and cover with water.
  2. Bring to a boil, then turn heat down to medium.
  3. Slow boil beats for about 40 minutes until tender.
  4. Drain beats and let cool.
  5. Slip off beet skins and slice beats. Set them aside.
  6. Combine all other ingredients in a medium saucepan.
  7. Bring to a boil, and simmer for about 10 to 15 minutes.
  8. Pour mixture in 1/2-gallon sterilized jar (boil jar and lid for 10 minutes to sterilize), and place sliced beats inside.
  9. Leave 1-inch headspace in the jar, and cover/seal it.
  10. Boil jar in a water bath for 12 minutes and cool on a rack.
  11. Place jar of pickled beets in the refrigerator for at least a week before serving.
  12. Store jar in the refrigerator for up to six months.
