  • ½ Tsp salt
  • 1 Tsp garlic powder
  • Pepper to taste
  • Nonstick cooking spray

Directions

Just follow these steps to create an easy, quick meal for your family.

  1. Preheat the oven to 425 degrees.
  2. In oil, sauté all vegetables until they are soft and the onions are just turning brown. Remove from heat and allow to cool.
  3. Meanwhile, mix all other ingredients together in a food processor. The consistency should be smooth and easy to pour, like that of an egg batter.
  4. Combine vegetables and tofu batter.
  5. Spray a glass baking dish with nonstick cooking spray.
