Stuffed Eggs

Ingredients for Stuffed Eggs Recipe

  • 1 dozen eggs
  • 2 teaspoons of mustard (your favorite variety, such as yellow, brown, jalapeno or Dijon)
  • 1/3 cup of mayonnaise
  • 1/2 teaspoon of lemon juice (fresh or bottled)
  • 1/4 cup of chopped olives, pimento peppers or pickle relish (optional - and only use one, if any)
  • Salt and pepper to taste
  • Paprika to taste


  1. Boil water in a medium pot.
  2. Place eggs in boiling water.
  3. Boil for 20 minutes.
  4. Place eggs in colander to drain.
  5. Run cold water over the eggs to cool them. It is fine if the shells crack.
  6. When the eggs are cool, remove the shells.
  7. Using a knife, split each egg lengthwise.
  8. Remove the yolks and place them in a small mixing bowl. Be careful not to damage the whites.
  9. Place the whites on a plate or tray, open side up.
  10. Using a fork, mash the yolks.
  11. Add mayonnaise, salt and pepper.
  12. Mix well to combine.
  13. Stir in the optional ingredient of your choice, if you are using one.
  14. Using a spoon, refill the whites with the yolk mixture, ensuring they are well-rounded.
  15. Sprinkle with paprika.
  16. Cover and chill until ready to serve.
