Strawberry fritters

Ingredients for Strawberry Fritters Recipe

  • Canola oil for frying
  • 1 1/2 cups flour
  • 1/2 cup vanilla coconut milk
  • 2 egg whites
  • 1/2 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/4 cup sugar
  • 1 1/2 cups chopped strawberries
  • Powdered sugar


  1. Clean and hull the strawberries and set aside.
  2. Heat oil in a heavy bottomed saucepan until it reaches 350 degrees.
  3. Beat egg whites to soft peaks.
  4. In a separate bowl, sift together all of the dry ingredients.
  5. Stir wet ingredients into the dry.
  6. Gently fold in the egg whites and strawberries, making sure that all the berries are covered in the batter.
  7. Take small scoops of the mixture and drop into the oil.
  8. Cook for 5 minutes, flipping each fritter halfway through cooking.
  9. Remove fritters from the oil and place on paper towels to drain.
  10. Dust with powdered sugar and serve while warm.
