Ingredients for Puffball Fritters Recipe

  • 1 cup all-purpose flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1 beaten egg
  • 2/3 cup milk
  • 1 puffball mushroom
  • Canola or peanut oil for frying
  • Green onion for garnish


  1. Clean puffball by wiping clean with a damp cloth.
  2. Cut one end off the puffball and scrap the inside carefully.
  3. Remove the outer skin from the puffball and cut into 1/2 inch slices.
  4. In a bowl, add flour, baking powder and salt and stir together until well combined.
  5. In a separate bowl, combine egg and milk and whisk together.
  6. Add the egg and milk mixture to the dry ingredients and stir until well moistened.
  7. Gently fold in the puffball slices.
  8. In a large pan, heat 3 inches of oil.
  9. Using a tablespoon, drop fritters into the oil for 3 minutes or until golden.
  10. For best results, only fry a few fritters at a time.
  11. Have a plate lined with paper towels and remove fritters from oil and place on towels to drain.
  12. Garnish with green onion and serve immediately.
