Fish croquettes

Ingredients for Fish Croquettes Recipe 1

  • 1 pound of cooked fish
  • 1 pound of diced cooked potato
  • 1 bulb fennel, finely chopped
  • 2 tablespoons chopped parsley
  • 1 large egg
  • 1 tablespoon of butter
  • 1/2 cup dry bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • Vegetable oil for frying
  • 1 lemon cut into wedges
  • Ketchup
  • Tartar sauce


  1. Preheat oven to 425 degrees.
  2. Remove all skin and bones from the fish and then flake fish with a fork.
  3. In the bowl of a food processor or blender, combine the fish, diced potato, fennel, parsley, egg, and butter.
  4. Blend until all the ingredients are well combined.
  5. Pour mixture into a mixing bowl and add salt and pepper to taste.
  6. Chill in refrigerator for an hour or until firm.
  7. Remove from refrigerator and begin shaping mixture into croquettes.
  8. On a large plate, spread bread crumbs.
  9. Coat each croquette in bread crumbs and then place on a large plate.
  10. In a large pan, heat vegetable oil on high.
  11. Begin adding croquettes one at a time to the oil. Fry on medium heat until each is golden brown on both sides.
  12. Remove croquettes from pan and place on a lightly greased cookie sheet.
  13. Bake for 12 minutes on 425 degrees.
  14. Remove from oven and allow to sit for 1 minute before serving.
  15. Garnish with lemon wedges and serve with ketchup and tartar sauce.
