Ingredients for Slow Cooker Potato Soup Recipe

  • 2 pounds potatoes, peeled and cut into 1/2-inch cubes

  • 1 large onion, diced

  • 32 ounces vegetable broth

  • 4 cloves garlic, minced

  • 4 tablespoons butter

  • 1 teaspoon herbes de Provence

  • 1 teaspoon dried parsley

  • 1 teaspoon marjoram

  • Salt to taste

  • Pepper to taste

  • 1 cup half-and-half

  • 1 cup shredded extra-sharp cheddar cheese

Optional Garnishes

  • Diced green onions

  • Crumbled, cooked bacon

  • Extra-sharp shredded cheddar cheese


  1. Set slow cooker on low heat.
  2. Place first ten ingredients into the slow cooker and allow to cook undisturbed for eight hours.
  3. Use a potato masher to smash potato pieces until the soup has thickened and small cubes remain.
  4. Add the half-and-half and cheese to the soup mixture and stir thoroughly.
  5. Serve slow cooker potato soup in soup bowls, and top with diced green onions, crumbed bacon, and additional shredded cheddar cheese, if desired.

When combined with a green salad and crusty dinner rolls, slow cooker potato soup is a great light dinner or lunch.
