Ingredients for Candied Orange and Grapefruit Peel Recipe 1

  • 1 orange rind
  • 1 grapefruit rind
  • 1 cup granulated sugar, plus sugar for rolling rinds
  • 1 cup water, plus enough to boil rinds
  • Melted chocolate of your choice, optional


  1. Scrub the citrus rinds thoroughly to remove any dirt.
  2. Cut orange and grapefruit peel into narrow strips. Scissors work well for this task.
  3. Put rinds into cold water and bring to a boil. Boil for 10 minutes.
  4. Drain rinds and repeat boiling process twice.
  5. Drain and rinse with cold water.
  6. Scrape away any remaining pith (white part of the peel).
  7. In a small saucepan, combine 1 cup of sugar and 1 cup of water and bring to a low boil.
  8. Stir mixture until sugar is dissolved.
  9. Add rind and cook on low for at least 2 hours.
  10. Stir mixture frequently to make sure all rinds are covered in sugar syrup.
  11. Remove from heat and allow peel to cool.
  12. Roll each strip in granulated sugar, and then place on a cake rack.
  13. Dry peel overnight on the rack.
  14. Once strips have hardened, they are ready to use.
  15. For a special touch, dip each strip into melted chocolate and allow to cool.
