Ingredients for Bread Sauce Recipe 1

  • 1 1/4 cups milk
  • 1 onion, cut into quarters and studded with 5 whole cloves
  • 1/2 cup bread crumbs
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Dash nutmeg


  1. Put the milk, bay leaf and onion in a medium-size saucepan over low heat.
  2. Simmer for about 10 to 15 minutes or until the onion is fork tender.
  3. Using a slotted spoon, remove the onion and the bay leaf.
  4. Reserve the onion; discard the bay leaf.
  5. Stir in the butter and other seasonings, and mix well.
  6. Add the bread crumbs and the heavy cream; cook for about 5 minutes or until the sauce thickens.
  7. Remove the pan from heat.
  8. Remove the cloves from the onion and discard.
  9. Purée the cooked onion in a food processor and gently fold into the sauce.
  10. Sprinkle nutmeg over top and serve with chicken, turkey, or game hens.
