Instructions

  1. In a blender or food processor, squeeze the lemon juice over the chopped avocado.
  2. Add the lemon zest, milk, dill, chives, thyme, parsley, garlic, salt and pepper.
  3. Blend or process until smooth.

Russian Dressing

This creamy red dressing is delicious on chopped salads. It has a slight kick, so if you like a little heat, you'll definitely enjoy this dressing. The recipe yields about 3/4 cup, or about six, 2-tablespoon servings. This dressing will store, tightly sealed, in the fridge for up to one week.

  • Russian dressing
    1/2 cup vegan mayonnaise
  • 1 tablespoon horseradish (or to taste)
  • 2 tablespoons ketchup
  • 1/2 shallot, finely minced
  • 1 teaspoon vinegar
  • 1/2 teaspoon garlic chili sauce
  • 1 teaspoon vegan Worcestershire sauce
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon freshly cracked black pepper

Instructions

Combine all ingredients in a bowl and whisk until smooth.
