Ingredients for Tofu Cheesecake Recipe

  • 1 pound plain tofu
  • 8 ounces cream cheese
  • 2 eggs
  • 2/3 cup honey
  • 2 tbsp. oil
  • 1 tbsp. vanilla extract
  • 1 tbsp. lemon juice
  • 1 graham cracker crust

Instructions

  1. Preheat oven to 350 degrees.
  2. Using a blender, combine the tofu, cream cheese, eggs, honey, oil, vanilla, and lemon juice.
  3. Blend until all ingredients are smooth and incorporated. This may take a while since tofu can be thick.
  4. Pour into crust.
  5. Bake for 35 minutes.
  6. After the cheesecake has cooled, add fruit topping like berries if desired.
