Ingredients for Simple Fruit Cake Recipe

  • 1 cup chopped golden raisins
  • 1/2 teaspoon salt
  • 1 1/2 cups chopped walnuts
  • 1 cup chopped dried sweetened cranberries
  • 1 cup unsweetened crushed pineapple
  • 1/4 cup grated lemon peel
  • 1 cup flaked coconut
  • 1/3 cup orange juice
  • 1/2 cup sugar
  • 1 teaspoon ground mace
  • 1 teaspoon ground allspice
  • 1 teaspoon baking soda
  • 1 1/2 cups all-purpose flour


  1. Mix the raisins, nuts, cranberries, coconut and lemon peel together with the flour until well coated.
  2. Mix in the sugar, orange juice, baking soda, salt and spices.
  3. Stir well to combine.
  4. Pour the batter into a greased 9-inch cake pan.
  5. Bake at 325 degrees for 40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow to cool completely before removing from the pan.


Fruit cakes can be endlessly changed and seasoned in a variety of ways. Try using any of the following fruits and nuts in place of, or in addition to, those listed:

  • Candied orange peel
  • Candied lemon peel
  • Candied grapefruit peel
  • Pecans
  • Sliced almonds
  • Maraschino cherries
  • Dried blueberries
  • Currants
  • Dried chopped apricots
  • Dried diced apple
