Russian Beet Soup

Ingredients for Russian Beet Soup Recipe

  • 4 cups of water
  • 4 beef bullion cubes
  • 2 tablespoons of butter
  • 1 teaspoon of lemon juice
  • 2 large beets
  • 2 medium carrots
  • 1 large onion
  • 1 cup of shredded cabbage
  • 1/2 cup of sour cream (optional)
  • Salt and pepper to taste

Instructions

  1. Pour water into a medium stock pot and bring to a boil.
  2. Add bullion cubes, stirring to dissolve.
  3. Add butter.
  4. Add lemon juice.
  5. Lower heat to medium.
  6. Dice the beets into approximately 1/2-inch squares.
  7. Shred or finely dice the carrots.
  8. Peel and dice the onion.
  9. Shred the cabbage.
  10. Place all ingredients except cabbage into beef bullion mixture.
  11. Cook for 15 minutes.
  12. Add the shredded cabbage.
  13. Cook for 15 minutes longer.
  14. If desired, top individual servings with sour cream.
