Raisin and Nut Cake

Ingredients for Nut and Raisin Cake Recipe

  • 1 cup of nut meats
  • 1/2 cup raisins
  • 1/2 cup of butter
  • 1 cup of sugar
  • 3 eggs
  • 3/4 cup of milk
  • 2 cups of flour
  • 2 level teaspoons of baking powder
  • 1/4 teaspoon of cinnamon
  • 1/4 teaspoon of mace
  • Grated rind of 1 lemon

Instructions

  1. Preheat oven to 350 degrees F. Grease and flour tube pan.
  2. Process nut meats and raisins in food processor until finely chopped. Set aside.
  3. In a large mixing bowl, cream the butter and sugar together.
  4. Add the eggs one at a time, mixing thoroughly after each addition.
  5. Add the milk and beat the batter on low speed.
  6. Meanwhile, in a medium bowl, sift together flour, baking powder, mace and cinnamon.
  7. Add the raisin and nut meat mixture to the dry ingredients and stir until well-mixed.
  8. Slowly add in the dry ingredients, and mix on low speed.
  9. Stir in grated lemon rind.
  10. Pour batter into tube pan and bake for 50 minutes, or until toothpick inserted comes out clean.
