Ingredients for Mexican Rice Pudding
- 2 cups cooked rice
- 1 cup sugar
- 1 cup sweetened condensed milk
- 2 quarts whole milk
- 2 cinnamon sticks
- 1 tablespoon vanilla
- Bring whole milk to a boil and add the cinnamon sticks.
- Stir in the rice, cover, and simmer for 15 minutes.
- Remove from the heat and add the milk and sugar. Stir until well incorporated.
- Return to heat and simmer for another 3 minutes.
- Remove from heat and add vanilla.
