Ingredients for Egg Soup Recipe
- 1 quart of milk
- 1 minced onion
- 1 pinch baking soda
- 1 tablespoon butter
- 1 tablespoon flour
- 6 eggs
- Heat a quart of milk in a double boiler into which has been stirred a minced onion and the soda.
- Rub the butter and flour to a paste, and stir into the milk.
- Season to taste with pepper and salt.
- Poach 6 eggs and lay them in the bottom of the tureen. When the soup is smooth and creamy, pour it carefully upon the eggs.
