Ingredients for Egg Soup Recipe

  • 1 quart of milk
  • 1 minced onion
  • 1 pinch baking soda
  • 1 tablespoon butter
  • 1 tablespoon flour
  • Pepper
  • Salt
  • 6 eggs


  1. Heat a quart of milk in a double boiler into which has been stirred a minced onion and the soda.
  2. Rub the butter and flour to a paste, and stir into the milk.
  3. Season to taste with pepper and salt.
  4. Poach 6 eggs and lay them in the bottom of the tureen. When the soup is smooth and creamy, pour it carefully upon the eggs.
