Ham and Cheese Pinwheels

No one wants to spend all day in the kitchen, so it's easy summer snack recipes to the rescue.

Ingredients

  • 4 flour tortillas
  • 8 oz whipped cream cheese
  • 8 slices deli ham

Instructions

  1. Spread cream cheese over one side of each tortilla.
  2. Top each tortilla with two slices of ham.
  3. Roll tightly and slice.

Hummus and Veggies

Ingredients

  • 1 (15 ounce) can garbanzo beans, drained
  • 1/2 cup tahini
  • 1/2 cup olive oil
  • 1/2 teaspoon ground cumin
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Process all ingredients in a food processor until smooth.
  2. Serve cold with sliced vegetables and toasted pita bread.

Hot Wings

Ingredients

  • 4 pounds chicken wings
  • 4 tablespoons Cajun seasoning
  • 1 (5 ounce) bottle hot sauce

Instructions

  1. Sprinkle Cajun seasoning over wings.
  2. Pour hot sauce over wings, turning to coat.
  3. Refrigerate at least two hours.
  4. Bake at 400 degrees for 20 minutes. Turn and cook for another 15 minutes or until done.

Turkey Wrap

Ingredients

  • 4 flour tortillas
  • 8 slices deli turkey
  • 4 leaves Romaine lettuce
  • 1 tomato, sliced
  • 1/2 cup Ranch dressing
  • 8 slices Swiss cheese

Instructions

  1. Spread Ranch dressing on each tortilla.
  2. Top with two slices of turkey, two slices cheese, one leaf of lettuce, and sliced tomato. Roll up tightly.

Ingredients

  • 1 cup plain yogurt
  • 1 tablespoon honey
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger

Instructions

  1. Combine all ingredients in a bowl, stirring until well blended.
  2. Serve cold with assorted fruit.

Easy Veggie Pizza

Ingredients

  • 1 ready-made pizza crust, such as Boboli
  • 1 cup mozzarella cheese
  • 1/2 cup marinara sauce, such as Boboli
  • Assorted vegetables to taste: corn, mushrooms, red onions, bell peppers, tomatoes, artichokes

Instructions

  1. Spread marinara sauce over crust.
  2. Add 1/4 of the cheese. Layer veggies over the cheese. Top with remaining cheese.
  3. Bake at 450 degrees for 8 minutes.

Easy Summer Snack Recipes: Chips

Cheese Dip Ingredients

  • 1 lb Velveeta cheese product
  • 1 can Rotel tomatoes and green chilis

Instructions

  1. Chop Velveeta and place in a large bowl.
  2. Pour Rotel, including juices, over cheese.
  3. Microwave, stirring frequently, until cheese is melted and heated through.
  4. Serve with chips.

Potato Wedges

Ingredients

  • 8 baking potatoes, scrubbed, cut into wedges
  • 1/2 cup olive oil
  • 2 tbsp. Parmesan cheese
  • Salt, pepper, and garlic powder to taste

Instructions

  1. Mix dry spices and oil. Dredge potatoes in mixture.
  2. Place potatoes in a single layer in a baking dish. Top with cheese.
  3. Bake at 375 degrees for 45 minutes or to desired doneness.

Cheese and Grape Skewers

Ingredients

  • 8 oz cheddar cheese, cubed
  • 24 grapes of assorted colors

Instructions

  1. Alternate grapes and cheese on toothpicks or skewers. Serve with yogurt or marshmallow dip.
