Ingredients for Date Cake Recipe

  • 2 cups pitted dates
  • 1 cup hot coffee
  • 10 tablespoons room temperature butter
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 1/3 cups flour
  • 2/3 cup cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees.
  2. Chop the dates into small bits and place in a bowl.
  3. Add coffee and allow to sit over the dates for several minutes, until the dates begin to soften.
  4. Prepare a cake pan by greasing with butter then dusting with cocoa powder.
  5. Beat the butter until light and fluffy then add sugar and continue to beat for 2 minutes.
  6. Begin adding the eggs one at a time to the butter and sugar mixture.
  7. In a separate bowl, combine the flour, remaining cocoa, baking soda, and salt.
  8. To the dry mixture, add the eggs, butter, sugar, dates and coffee and mix until combined.
  9. Pour batter into the cake pan.
  10. Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
  11. Cool cake on a wire rack.
  12. Serve with whipped cream.
