Slow Cooker Potato Soup Recipe

Ingredients for Slow Cooker Potato Soup Recipe

2 pounds potatoes, peeled and cut into 1/2-inch cubes

1 large onion, diced

32 ounces vegetable broth

4 cloves garlic, minced

4 tablespoons butter

1 teaspoon herbes de Provence

1 teaspoon dried parsley

1 teaspoon marjoram

Salt to taste

Pepper to taste

1 cup half-and-half

1 cup shredded extra-sharp cheddar cheese
Optional Garnishes

Diced green onions

Crumbled, cooked bacon

Instructions
- Set slow cooker on low heat.
- Place first ten ingredients into the slow cooker and allow to cook undisturbed for eight hours.
- Use a potato masher to smash potato pieces until the soup has thickened and small cubes remain.
- Add the half-and-half and cheese to the soup mixture and stir thoroughly.
- Serve slow cooker potato soup in soup bowls, and top with diced green onions, crumbed bacon, and additional shredded cheddar cheese, if desired.
When combined with a green salad and crusty dinner rolls, slow cooker potato soup is a great light dinner or lunch.
