Sugar-Free Red Velvet Cake Recipe

Ingredients for Sugar-Free Red Velvet Cake Recipe

  • 2 1/4 cups cake flour
  • 2 tablespoons unsweetened cocoa
  • 1 teaspoon salt
  • 1/2 cup butter, softened
  • 1 1/2 cups SPLENDA®
  • 1 1/2 teaspoons pure vanilla extract
  • 2 large eggs
  • 1 tablespoon red liquid food coloring
  • 1 cup buttermilk
  • 1 1/2 teaspoons baking soda
  • 1 tablespoon white vinegar

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Spray two 9-inch cake pans with non-stick spray.
  3. In a medium-size bowl, combine the flour, cocoa and salt. Stir the ingredients together slowly and then set aside.
  4. In a large bowl, cream the butter, SPLENDA®, and vanilla together.
  5. Add the eggs and red food coloring and beat on low until fully mixed.
  6. Alternate adding 1/3 of the flour mix and 1/3 of the buttermilk to the butter mixture, beating on low until the ingredients are combined.
  7. Use a wooden spoon to stir in the baking soda and vinegar.
  8. Divide the batter evenly between the two cake pans, and bake for approximately 35 minutes or until the each cake layer springs back when tapped in the center.
  9. Allow the cakes to cool in the pans for 15 minutes and then remove them from the pans and let them cool completely on wire racks.
  10. Frost the cake with sugar-free cream cheese icing.
