It has a crunchy top, a blueberry-filled cake-like crumb, and a tangy-sweet cream cheese center. You'll be begging for seconds after tasting this melt-in-your-mouth irresistible treat.

Recipe for Gourmet Blueberry Muffins

The rolled oats in this recipe add to the texture and moisture of your muffins. Not a fan of oats? You can replace the oatmeal with an equal part of almond flour. This recipe makes 12 muffins. Store them in the fridge in a zipper bag for up to five days, or freeze them for up to six months. 

Filling Ingredients

  • 4 ounces plain cream cheese
  • ¼ cup confectioners' sugar

Muffin Ingredients

  • 1 cup of milk
  • 1 egg
  • ¼ teaspoon almond extract
  • ¼ cup canola oil
  • 1¼ cups of flour
  • 1¼ cups rolled oats
  • ⅓ cup granulated sugar
  • ½ teaspoon salt
  • 1 tablespoon baking powder
  • 1 cup of fresh blueberries

Topping Ingredients

  • ⅓ cup all-purpose flour
  • ¼ cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • ¼ cup oatmeal

Instructions

  1. Preheat your oven to 400°F. Grease a 12-muffin tin or line each tin with a paper liner.
  2. Make the filling first. Beat the cream cheese and confectioners' sugar in a large bowl until smooth to make the filling. Chill the mixture in the refrigerator.
  3. Next, make the muffin batter. Combine the milk, egg, almond extract, and oil in one bowl.
  4. Mix flour, rolled oats, granulated sugar, salt, and baking powder in a separate bowl.
  5. Add the liquid ingredients to the dry ingredients and stir until moist.
  6. Fold in the blueberries.
  7. Fill the greased or lined muffin cups ⅓ full with batter.
  8. Place 1 tablespoon of cream cheese filling in each muffin cup.
  9. Top the muffin cups with the remaining batter.
  10. Combine the ingredients for the topping in another bowl. Combine the flour, sugar, melted unsalted butter, and oatmeal. Mix together until the mixture forms small crumbles. 
  11. Sprinkle the topping mixture on the muffins.
  12. Bake in the preheated oven for 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
Quick Tip

For an extra crunchy topping, add crushed almonds or pecans. Combine ¼ cup crushed nuts of your choice to the topping mixture.
