Baked Fresh Codfish with Cheese Sauce Recipe

Ingredients for Baked Fresh Codfish with Cheese Sauce Recipe

  • 1 pound fresh cod, with skin and bones removed
  • 2 cups water
  • 2 tablespoons salt
  • 2 tablespoons lemon juice
  • 2 tablespoon butter
  • 1 cup seafood stock
  • 1/2 cup dry bread crumbs
  • 1 tablespoon flour
  • 4 tablespoons Parmesan cheese
  • Salt and pepper to taste


  1. Pour the water into a large bowl and add the salt. Mix well until the salt is dissolved.
  2. Place the fish in the salt water and allow to sit for 30 minutes. Remove and pat dry.
  3. Rub 1 tablespoon of lemon juice and 1 tablespoon of butter over the surface of the fish.
  4. Place the fish on the top grate of a broiler pan.
  5. Pour the stock into the bottom section of the pan, below the grate. Do not let it touch the fish.
  6. Salt and pepper the fish to taste and bake it for 20 minutes at 350 degrees F.
  7. Remove the fish from the oven and pour the stock from the bottom pan into a saucepan.
  8. Sprinkle the top of the fish with bread crumbs and return it to the oven for 10 minutes.
  9. Thicken the stock with 1 tablespoon of butter, 1 tablespoon of lemon juice, the flour and Parmesan cheese.
  10. Boil the stock for 1 minute.
  11. Pour a little of the stock over the fish before serving; place the rest in a gravy boat.
