Ingredients for Baked Beans Without Pork Recipe

  • 1 green pepper, cut into chunks
  • 1 red pepper, cut into chunks
  • 2 jalapeno peppers, cut into slices, seeds removed
  • 1 medium onion, chopped
  • 3 cloves of garlic
  • 2 tablespoons vegetable oil
  • 1/2 cup tomato paste
  • 1/2 cup vegetable broth
  • 1/2 cup whiskey
  • 4 cups canned pinto beans
  • 1/2 cup molasses
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1/2 teaspoon liquid smoke

Instructions

  1. Preheat your oven to 350 degrees.
  2. Pulse peppers, onions, and garlic in a food processor until very finely chopped.
  3. In a 12-inch sauté pan, heat vegetable oil over medium-high heat. Add peppers and onions, and cook for about 2 to 3 minutes.
  4. Add tomato paste and cook, stirring to brown tomato paste, about 3 to 4 minutes.
  5. Add whiskey and stir, scraping any bits off the bottom of the pan. Simmer for about 1 minute.
  6. Add stock and stir to combine. Remove from heat.
  7. Combine onion mixutre with remaining ingredients, and pour into a large covered casserole dish.
  8. Bake, covered, for 1 hour.
  9. Remove lid and continue cooking for another 15 minutes to thicken.
